Summer is here! Hibiscus & Rooibos Ice Tea

Last winter I made many pots of hot hibiscus and Rooibos tea and my body loved it. If you’re also finding yourself wilting in this Cape Town heat, this drink is easy to tweak into a refreshing and wonderfully healthy and caffeine-free thirst quencher.
Hibiscus and Rooibos Ice Tea
- 1 litre water
- ¼ cup dried hibiscus flowers or petals
- 4 Sunbird Rooibos Leopard Valley teabags or 4 teaspoons of Hidden Valley loose leaf Sunbird Rooibos tea
- 3 tablespoons of honey (optional)
- Fresh mint
- Sliced grapefruit
Add the tea and hibiscus in freshly boiled water and let steep for 15 minutes. Then remove the teabags, or loose leaf tea strainer, and add the honey and taste to adjust sweetness. We like it just like that without any sweetener. Let it cool and add lots of ice, some mint and slices of grapefruit. Voila!
